Estate grown and hand harvested, de-stemmed into bins, and cold soaked for five days. Primary fermentation in bins, followed by gentle extraction. Secondary fermentation in 10% new and 90% seasoned French and American oak for 12 months. Lighter body and tannins, but great structure due to some acidity and low residual sugar at 3.0g/L. Ruby red colour with classic Cab Franc aromas of cherries, bell peppers, and hints of cigar box. Dark chocolate and cherry pith on the palate, with hints of white pepper. Pair this wine with rosemary lamb, slow roasted beef, or lava cake. Enjoy today, or cellar for later. 750ml bottle, 12.7% ABV.
